|The Ella Valley Wineries are among the few wineries in Israel, at the size of 300,000 bottles a year, which have their own vineyards, enabling them to rely solely on their own vineyard without the need for external vine-growers.
The winery owns 700 dunams (173 acres) of land, part of the produce of the vineyard is used by the winery and the rest is sold as raw ingredients to other wineries. The winery team has chosen the appropriate plots and varieties which will be planted in each plot, and is responsible for the entire cultivation process and determining the moment of harvest. This complete control allows the winery to produce high quality and uniform wine, year after year. The grapes are the raw ingredient of the winery, and their quality determines the quality of the wine. Therefore, attention and special precision are dedicated to caring for the grape vines.
The winery controls all the parameters affecting the vineyard - foliage, amount of water, soil, trellising, and more. All of these factors affect the amount of crop yield, a highly significant component concerning the quality of the grape: too large of a yield hurts the strength of the fruit and the characteristics of the cultivar, but too small a yield is also not desirable. The secret is to find the right balance. Treatment of the vineyards is done using methods which combine old traditions brought from Europe and the New World, and innovative technologies which ensure the quality of the grape. Great effort is invested in preventing the entry of harmful chemicals into the soil, by fertilizing with natural materials such as compost and the use of advanced methods of biological pest control
